Inspired by an early version of the recipe at the link. The only ingredients I added were the ingredients below (forgot the nutmeg), but on the new recipe at the link, she suggests optionally adding things like chopped nuts & chopped bell pepper. I stuck with the basics! -Alesia

Ingredients

2 x 10 ozfrozen spinach
packages, cooked & drained
2 cupscroutons
made from low protein bread, cut into 1/2” cubes & toasted/dried
1 cupgrated Parmesan cheese
vegan
6 Tbspegg mix
½ cupwater
4 tspvegetable oil
1 tspkala namak
¾ cupbutter
vegan, softened
½ tsppepper
¼ tspnutmeg
freshly grated, or to taste
¼ cuponion
finely minced
Instructions
Step 1
In a large bowl, combine all ingredients; mix well. Shape by rounded teaspoons into small balls. Place on lightly greased baking sheet. Bake at 350°F for about 15-20 minutes, or until firm. Serve warm.
Note
Step 2
If egg mixture is too thick, you can add up to 4 tbsp (¼ cup) water to thin it out. (If it thickens additionally from sitting out, add more water, 1 tsp at a time).
