Instructions

Step 1
Heat oil and gently fry onion for 10 minutes until soft. Add the garlic, ginger, chilli and spices and fry for 2 minutes to take the edge off the flavours
Step 2
Stir in the coconut cream and fish stock followed by the tomatoes. Season, bring to the boil and simmer for 5-10 minutes until sauce has thickened
Step 3
Add the king prawns and simmer gently for 3 minutes until they turn pink - don’t boil or they’ll become tough
