Seasoning Mix
2 Tbspcurry powder
½ tspground turmeric
½ tspground cumin
¼ tspground coriander
½ tspground cinnamon
½ tspblack pepper
1 tspcayenne pepper
½ tspdried sweet basil leaves
Curry
2 TbspVeg Oil
3 cupsonion
chopped
0.5 lbunsalted butter
2 cupbanana
¾ tspgarlic powder
½ tspcayenne pepper
½ cuppecan halves
2 cupsapple
peeled and chopped
¾ cupcanned cream of coconut
½ tspblack pepper
2 cupschicken stock
2 lbsboneless skinless chicken breast
½ tspdried sweet basil
½ cupCoconut flakes
lightly packed
½ tspwhite pepper
0.5can coconut milk
Instructions
Step 1
Add butter, oil, onions, and seasoning mix to a large pot. Set on high heat until butter melts, then simmer for 20 minutes.
Step 2
Add bananas, cook and stir in until mushy.
Step 3
Add 1 cup of apples, raisins, and pecans. Option to add more oil as necessary here. Simmer 20 minutes.
Step 4
Combine salt, garlic, cayenne pepper, black pepper, basil, and white pepper. Stir together in side bowl.
Step 5
Chop thawed chicken into ~1/2” cubes. Work in seasoning from previous step.
Step 6
Turn heat to high. Stir in chicken and 1 more cup of apples. Cook and stir for 3 minutes.
Step 7
Add chicken stock, cream of coconut, coconut milk, and coconut flakes. Turn heat to low, simmer for 15 minutes.
