Step 1
Combine shallot vinegar and some salt in a bowl. Heat oil and put in walnuts about 3 minutes to light brown. Add mushrooms 3-5 min. Put mushrooms and the oil on top of spinach in a bowl. Add shallot mixture and more oil if needed. Toss. Salt and pepper.
