Hey loves!βΊοΈ If youβre looking for something cheap and filling to eat for lunch/dinner, give these vegan sloppy joes a tryππ½ They are easy to make, packed with protein + fiber, and bursting with tangy goodnessπβ£β£

π±ππ§π π«πππ’ππ§ππ¬ (~8 servings)π±: β£β£β£
~ 1.5 tbsps grapeseed oil β£β£β£
~ 1/2 yellow onion, medium-sized β£β£β£
~ 1 green bell pepper, medium-sized β£β£β£
~ 4-6 garlic cloves β£β£β£
~ seasonings: 2 tbsps chili powder, 1.5 tsps smoked paprika, 1 tsp of each (garlic & onion powder), black pepper & sea salt to tasteβ£β£β£
~ 1 cup brown lentils β£β£β£
~ 1 cup tomato sauce β£β£β£
~ 2 cups low sodium vegetable broth β£β£β£
~ 2 tbsps brown or coconut sugar β£β£β£
~ 2 tbsps ketchup β£β£β£
~ 2 tbsps vegan worcestershire sauce
~ *optional*β£β£β£ a few dashes of hot sauce/sriracha for π₯

~ seasoned french fries β£β£β£
~ side salad (lettuce, cucumbers, tomatoes, shredded carrots, Italian dressing + seasonings of choice)β£β£β£

π. Dice the onion + bell pepper, and mince the garlic. Rinse and drain brown lentils. Set aside. β£β£β£
π. Add oil to a pot and heat over medium heat. β£β£β£
π. Next, add in onions and bell peppers. Sprinkle with salt + pepper (I started with ~ 1/2 tsp of each) and sautΓ© for around 5 mins.β£β£β£
π. Mix in garlic and sautΓ© for another 5 mins.β£β£β£
π. Mix in seasonings and sautΓ© for an additional 1-2 minutes. β£β£β£
π. Add lentils, tomato sauce, veggie broth, sugar, ketchup, worcestershire sauce, hot sauce and additional salt + pepper to pot (I added around 1-1.5 tsps of salt & 1/4 tsp pepper). Stir until everything is fully combined. β£β£β£
π. Bring mixture to a boil. Once boiling, cover mixture with lid and simmer on low to medium heat for around 30-35 mins or until lentils are tender. Stirring occasionally. β£β£β£
π. Time to enjoy!π Add your sloppy joes mixture to some toasted buns and serve with sides of your choice.β£β£β£
