Hearts of Palm with Orange-Saffron Dressing
HEARTS OF PALM
If you were naming a food that is silky in texture with a deliciously delicate flavor, would you call it "swamp cabbage" or "hearts of palm?"
Actually, both terms are used to describe this favorite of gourmet cooks, but given its elegant taste, we think the latter term is more fitting.
Hearts of palm are famous in Brazilian and some African cuisines.
They're even more famous, we suspect, among dieters, who delight that food tasting rest assured that they do more for you.

Instructions
Step 1
Place hearts of palm in a serving bowl.
Step 2
In a small custard cup, soak oregano and saffron in 1 tablespoon or orange juice.
Step 3
Let stand for 2 minutes.
Step 4
In a small bowl, whisk together remaining juice, vinegar, and oil.
Step 5
Add oregano, saffron, and orange juice to dressing and pour over the hearts of palm.
Step 6
Marinate for 1 hour before serving.
