Instructions
Step 1
Preheat oven to 350F. Oil up 8" loaf pan.

Step 2
Pulse oats in food processor until flour like, with some lumps for texture.
Step 3
Whisk dry ingredients in one bowl (w nuts). In seperate bowl, whisk pumpkin puree, honey, nut oil & eggs.
Step 4
Add dry ingredients to wet. Stir lightly until combined.
Step 5
Pour mix into pan, top with extra oats and nuts. Bake 50-60mins. Just right when top is slightly springy & toothpick comes out clean.
