½ cupwheat germ
1 cupall purpose flour
1 cupwhole wheat flour
1 ½ cupsrolled oatmeal
2 teaspoonsbaking powder
1 ½ teaspoonsbaking soda
1 teaspoonsalt
1 teaspooncinnamon
1 cupchopped walnuts
28 ounceszucchini
shredded
⅔ cuplight brown sugar
firmly packed
¾ cupcanola oil
2eggs

1 teaspoonvanilla
Instructions
Step 1
Heat oven to 400 degrees F. Grease or spray with Pam 22 muffin cups. In large bowl combine first 11 ingredients. In another bowl whisk eggs, oil, vanilla and brown sugar; stir in zucchini. Pour egg mixture into dry ingredients.stir just until mixed. Fill cups full. Bake 25 minutes or until muffins are golden and toothpick inserted in center comes out clean. Immediately remove from pans.
