Instructions
Step 1
Generously season chicken with southwest seasoning and fry in olive oil. After cooked and cooled, chop chicken with hand chopper. Open tortilla and spread a Tablespoon of refried beans around the center of the tortilla. Put a handful of chicken down the center of the tortilla. Cover the chicken with shredded cheese. Drizzle enchilada sauce over the cheese. Fold tortilla and place in casserole dish. Repeat with other tortillas.
Step 2
Drizzle enchilada sauce over all enchiladas and then cover with shredded cheese. Bake at 350 for 30 minutes.
