Ingredients

100gunsalted butter
2onions
large, sliced
4garlic cloves
sliced
30ganchovy fillets
roughly chopped
2 Tbspthyme
250mldouble cream
300mlchicken stock
1swede
sliced thin
1celeriac
sliced thin
400gpotatoes
sliced thin
150gwhite breadcrumbs
1 Tbspthyme
3 sprigsrosemary
chopped
60gcheddar gruyere
mixed
olive oil
salt
pepper
pepper
Instructions
Step 1
Melt butter and slowly fry onion, garlic, anchovy and thyme until meltingly soft
Step 2
Pour in cream and stock heat through and season
Step 3
Add cream to sliced vegetables
Step 4
Mix breadcrumbs, thyme, rosemary and cheese
Step 5
Scatter over vegetables and cover with foil for first 30 mins and uncovered for another 30 mins
