Instructions
Step 1
Heat a Dutch oven over medium heat and add olive oil to coat.
Step 2
Add onion, garlic, celery and carrot and stir fry for 2-3 minutes with a touch of salt.
Step 3
Add your spices: smoked paprika, cumin, nutmeg, and dried thyme.
Step 4
Add tomato paste and stir fry the veggies until everything is fragrant.
Step 5
Add a can of chopped tomatoes, followed by your rinsed green lentils and potatoes.
Step 6
Stir to combine and top with water. Add a veggie bullion cube and simmer everything, covered, for 30-40 minutes, until the lentils are cooked.
Step 7
Serve hot topped with sour cream and a dash of olive oil. You can also serve it with toast. Enjoy!
