Instructions
Step 1
Place the lentils, sweet potato and onion in a l quart pot and add the water.
Step 2
Place over high heat and bring to a boil.
Step 3
Cover the pot and reduce the heat to low, cook for 20 minutes, stirring halfway
Step 4
After 20 minutes, the lentils should be tender
Step 5
Uncover and raise the heat to medium.
Step 6
Stir in the salt, cumin, cinnamon, turmeric, paprika and currants.
Step 7
Cook about 7 minutes, stirring, until the soup is thickened and fragrant
Step 8
Serve topped with pistachios and a lemon wedge on the side to squeeze over the top, to taste
