Instructions

Step 1
Cook quinoa according to packing and set aside.
Step 2
Preheat oven to 425F and line a sheet pan with foil and spray with cooking spray.
Step 3
Arrange cubed butternut squash, mushrooms, broccoli on pan and sprinkle with sea salt, pepper and paprika.
Step 4
Bake for 25 minutes. Serve roasted veggies on top of quinoa.
