Cook lentils according to package
Step 2
Microwave sweet potato until soft
Step 3
In a cast iron skillet, heat olive oil, onion and carrots until soft. Add garlic and spinach and set aside
Step 4
Cook chicken and set aside
Step 5
In the skillet mix coconut milk, tomatoes and spices. Allow to come together and begins to bubble.
Step 6
Add sweet potatoes, lentils, veggies, chicken and stock
Step 7
Place skillet in the oven and bake until it comes together.
Step 8
Add cilantro before serving.
