Instructions
Step 1
Make the salsa by finely dicing the tomatoes and red onion. Add in chilli to your heat preference, chopped coriander and the lime juice. Mix together and taste - add more chilli/lime as desired.
Step 2
Fry eggs and heat the refried beans. Warm through tortillas.
Step 3
To serve - spread refried beans onto tortilla, add fried egg. Top with plenty salsa, and some cheese and hot sauce to taste.
