With a few minor tweaks, this traditional Mexican breakfast can be made macro friendly. For those abstaining from this Semana Santa, this is a perfect breakfast that doesn’t have meat but over 30 grams of protein!

Instructions

Step 1
1. Frijoles De La Olla: clean 1 cup of pinto beans and then soak for 2 hours. Rinse. Add room temperature water to the olla, 2 garlic cloves, and 1/2 onion to the water. Add the beans and cook for 2 hours, stirring occasionally and adding more water if necessary (the beans should be submerged in water). Once finished, add salt to taste.
Step 2
2. Air fry tortillas with a little oil spray at 390* F for 7-8 minutes. Flip halfway.
Step 3
3. Grease a pan with oil spray and add 1 egg with 3 tbsp egg whites. Cook until you’ve reached your desired consistency (3-4 minutes for a runny yoke) Season with salt and pepper. Repeat.
Step 4
4. To the same pan, add 1/2 c frijoles de la olla and mash until they are smooth.
Step 5
5. Evenly divide the beans on both tortillas. Then add one egg/egg white, 3 tbsp of salsa, and 7 grams of queso fresco (or cheese of choice)
