Instructions
Step 1
Preheat oven to 180°. Grease and line the base of a 20cm square cake tin with non-stick baking paper

Step 2
Heat the oil in a large non-stick frying pan and gently fry the onion, pepper and courgette for 5 mins, or until softened. Tip into the prepared tin and spread to the sides. Scatter the goat's cheese over the veg.





Step 3
Whisk the eggs in a small bowl with salt and lots of ground black pepper until thoroughly combined.

Step 4
Pour over the cheese and veg and bake for 20 mins, or until the frittata has set and is slightly puffy and golden brown.
Step 5
Cut into squares or bars to serve.
