These lentil fritters are flavourful, filled with protein, and easy to make. Pair with your favourite dipping sauce (I used aioli).

Step 1
Rinse lentils. Soak in water overnight in the refrigerator. Drain. Mix in 2 eggs + seasoning. Blend until partly smooth but still a bit chunky using an immersion blender or food processor. Add bread crumbs. Heat oil around 1-2mm in the bottom of a pan on medium to medium high heat. Drop spoonfuls of mixture in and flatten with back of spoon to 1/2 inch thick. Flip when browned after a few minutes. Cook until other side is browned. Drain on paper towel lined plate. Serve with your favourite dipping sauce.
