Step 1
Prepare the (vegan) mince. Preheat oven to 360*F. Peel and finely chop onions and garlic. Cut pumpkin in half and remove the core. Then cut into cubes.
Step 2
Then spray oil in a pan and fry the onions and garlic in it.
Step 3
Then add the vegan minced meat and fry. Add the pumpkin, tomato paste, strained tomatoes, thyme to the pan as well. Bring everything to a boil once and season with salt and pepper.
Step 4
Then pour into a baking dish and crumble the feta on top. Bake the pumpkin casserole in the oven for 25 minutes.
