Black eye peas migas

Migas is a traditional Portuguese side dish, it's typically made with black eyed peas, collard greens and broa (rustic corn bread). Here we removed the broa and replaced it with quinoa for a gluten free option with added protein.

Instructions
Step 1
1. In a Medium pot add 2 cups of water and 1 cup of quinoa. 2. Bring to a boil, reduce heat and simmer for 15 minutes.
3. Remove from heat and let sit for 10 minutes

Step 2
1. Heat 1.5 Tbsp of olive oil in pan on medium heat
2. Add onion, peppers and garlic sauté until soft and translucent
3. Add Chopped collard greens and kale add to the onion/pepper mixture and steam until tender
4. Add rinsed black eyed peas and quinoa stir to combine and heat through
5. Season with salt and pepper to taste.
6. Serve with a drizzle of olive oil and parsley
