Instructions
Step 1
Preheat oven to 200 degrees fan-forced.
Step 2
Thinly slice the capsicum and cut brown onion into wedges. Drizzle with olive oil, season with salt and pepper. Roast for 20-25 minutes.
Step 3
Melt butter and drizzle of olive oil over medium heat, add garlic for 1-2 minutes.
Step 4
Add rice and water as per packaging instructions to cook.
Step 5
Drain sweetcorn as heat on a large frying pan until lightly browned.
Step 6
Season beef with Moroccan seasoning and cook in frying pan until cooked through.
Step 7
Serve with finely chopped tomato, avocado and sour cream.
