Instructions

Step 1
Pick the spinach and boil some water in a pot.
Step 2
Slice tomatoes top to tail and place on a plate.
Step 3
Place coconut cream into a pot – bring this to a boil for roughly 5mins.
Step 4
Whisk the egg, add salt and pepper then fry in a small pan until the egg is light in colour.
Step 5
Chop the cashews nuts for garnish.
Step 6
When all is ready, blanch the spinach in the boiling water with some onion and salt to taste… Strain and squeeze out water then place the blanched spinach
Step 7
Put the Fold the fried egg into thirds and place on top of the tomato.
Step 8
Place spinach on top of the egg and tomato.
Step 9
Top with coconut cream and garnish with cashew nuts.
