These vegetarian empanadas are the perfect weeknight vegetarian made and a perfect switch up to your classic taco Tuesday! These are so easy and delicious and can easily be filled with whatever you want, savory or sweet! For this dough for the empanadas I it homemade using a pie crust recipe. Instructions

For the filling

Step 1
In a large skillet turn on your heat then add your cooking oil once your pan is hot. Add your beans and diced veggies and sauté for 5 minutes. Add your seasonings and mix to combine. Allow to cook on low heat for an additional 3-5 minutes.

Preheat oven to 375 degrees

If you are using homemade empanada dough, cut the dough into equal pieces and roll into a flat disk shape (about 4-6 inches wide). If you are using store bought pie crust dough, lay the crust out flat and with a cup (or some round *disk shaped* kitchen item) outline equal circles and cut out the circles according to the outline.
Step 4
Take a shaped empanada dough and start to fill your dough with 2 tbsp of your veggie filling and fold over one side of the dough to the other side (like a taco) and press the sides close. Take a fork and press the sides together again to from those infamous empanada “lines”. Place finished empanadas on a parchment lines baking dish and brush with egg wash (this will create a beautiful golden brown crust). Bake for 15-30 minutes (or until your empanadas are browned).
