Step 1
Preheat oven to 180C/gas 4. Mix spelt, stock, sweet potato, onion, garlic and then scatter olive oil, chorizo over top.
Step 2
Cover with foil and roast for an hour
Step 3
Remove foil and stir in spinach, lemon juice and seasoning.
