Instructions

Step 1
preheat oven to 400F
Step 2
toss butternut squash, salt, a bit of olive oil, cinnamon, smoked paprika, garlic powder, onion powder, and pepper. roast in the oven until caramelized, flip halfway through
Step 3
fry shallot in olive oil until crisp, drain
Step 4
Combine tahini, lemon juice, apple cider vinegar, olive oil, salt, and pepper
Step 5
in a large bowl, add arugula, roasted butternut squash, pomegranate seeds, pumpkin seeds, fried shallot, and shredded chicken breast. toss with dressing and serve
