Instructions
Step 1
Cut up each chicken breast in about 3 pieces. Keep a little bit of skin on each piece.
Step 2
In a pot, put 2-3 tablespoons of water. Place each piece touching the bottom of the pot. Season with garlic (powder or salt or fresh) and red pepper to taste. Then, a little black pepper and a little salt.
Step 3
Turn on high heat. When chicken begins to sizzle, turn heat down to low medium. Chicken should still be sizzling but slowly. The chicken will release some liquid to add to the water in the pan. Cover pot for 15-20 minutes, then cook uncovered. Check every 5 min. to be sure it's not burning. After first 10 minutes, turn the chicken over to the other side. Brown, making sure any skin on chicken gets crisp.
Step 4
If the water dries up, use another 2 spoons of water. Keep adding water by spoon or chicken will burn. Total cooking time is about 30 minutes - maybe 35. You'll know when it's done.
Step 5
Chicken should be lightly browned, any skin should be crisp, and it should be fork tender. (Nothing worse than raw chicken!)
