JACKET POTATO WITH QUORN CHILLI AND GUACAMOLE

Ingredients
2 servings

2sweet potatoes

0.5red onion
chopped

0.5red pepper
chopped

1clove garlic
crushed

1 teaspoonextra virgin olive oil

1.5 palm fulquorn mince
thickness amount

200gtin of kidney beans
rinsed

2 heaped teaspoonstomato purée

½ teaspoonchilli powder

½ teaspoonground cumin

1 teaspoonmixed herbs

paprika

100mlwater

Rocket leaves
to

1 tablespoonGuacamole
Instructions
Step 1
Preheat your oven to 180°C.
Step 2
Prick your sweet potatoes all over and bake in the preheated oven for 40 minutes.
Step 3
While your potatoes are baking you can make the chilli. Fry your red onion, red pepper and garlic in a teaspoon of extra virgin olive oil on a medium heat in your non-stick pan for 3 minutes or until softened.
Step 4
Add your Quorn mince, kidney beans, tomato purée, chilli powder, cumin, mixed herbs and paprika and mix all together.
Step 5
Add the water, stir thoroughly and simmer for 15-20 minutes.
Step 6
Now you can make your guacamole.
Step 7
Remove your potatoes from the oven and slice the top lengthways and pinch together to open the potato to make room for your delicious chilli.
Step 8
Top with the chilli, guacamole and a bunch of rocket lea
