Instructions
Step 1
Clarify butter and/or combine butter and canola/veg oil in pan (ghee substitute)
Step 2
Add tofu to pan
Step 3
Saute veggies in pan (could be onions, tomatoes, broccoli, cauliflower, carrots, snap peas, eggplant...)
Step 4
Add spices (ie cumin, coriander, cloves, cardamom, red chilli powder, ginger, mustard seed, fenugreek, turmeric, saffron...)
Step 5
Add ginger and garlic
Step 6
Add wet ingredients, ie coconut milk, tomato sauce, tomato paste, vegetable stock, heavy cream
Step 7
Let stew
Step 8
Add salt & pepper and any additional spices to taste
