Instructions
Step 1
Bring the rice vinegar, soy sauce, garlic and sugar to a boil in a saucepan until the sugar dissolves.
Step 2
Cook over medium heat for 10 minutes, stirring constantly.
Step 3
Stir in the mangoes, apricots, garlic, ginger, turmeric and wasabi; cook, stirring occasionally, until the fruit is soft and beginning to break apart, about 10 more minutes.
Step 4
Transfer the mixture to a blender or food processor and add the coriander and lime juice.
