Instructions
Step 1
In a bowl, combine the parmesan cheese, egg yolk and heavy cream. Set this aside.
Step 2
In a pan over medium heat, fry bacon until crispy.
Step 3
Remove the crispy bacon from heat but leave the bacon grease.
Step 4
In the bacon grease, sauté 1/4 of a yellow onion with 1 minced garlic clove until fragrant over medium low heat.
Step 5
Add 1/2 cup of chopped kimchi with kimchi juice. Stir fry for 5-6 mins over medium heat.
Step 6
Remove the pan from the heat and add in 1 package of cooked udon.
Step 7
Mix in the cream mix and some pasta water to loosen up the sauce. Add more if needed. Mix until the sauce has emulsified.
Step 8
Add the crispy bacon and toss together well.
Step 9
Garnish with scallions and extra bacon.
