Chicken Divan Casserole (Healthier Version)

This is a casserole recipe that has been in my family for generations and is the favorite dish for any occasion. Here, I have modified the recipe to be a healthier version of the original.

For the Sauce (to be poured over chicken and broccoli florets)
22.6 ozcondensed cream of chicken soup

15 ozmayonnaise
olive oil based
1 tablespooncurry powder
4 tablespoonslemon juice

Step 1
Preheat the oven to 350 degrees

Put chicken breasts into a pan on the stovetop with some water to cook while covered for 10 minutes on medium heat. After 10 minutes, cut the fat off of the chicken breasts and cut up into 1 inch cubes to be put back into the pan to finish cooking until no longer pink.

While the chicken is cooking, wash, cut, and dry your broccoli florets into small pieces and put in them into a 9x13 casserole dish as the base.

When the chicken is done, put the chicken on top of the broccoli florets.

To make your sauce, combine your mayonnaise, condensed cream of chicken soup, curry powder, and lemon juice and stir until homogenous. (You should have a yellowish color and a consistency that is you should have a slow trail following your spoon while stirring. Also, in taste testing the sauce, it should have a tangy flavor profile that should give you a tang at the back of your jaw as if you just had some lemon meringue pie.)

Pour your sauce mixture over the broccoli and chicken and spread with a spatula until completely covered in sauce.

With your casserole layered as follows (Broccoli, Chicken, Sauce), put your casserole into the oven at 350 degrees for 20 minutes.

After 20 minutes, spread the entire 8 oz of sharp cheddar onto the dish until completely covered and then put back in the oven to cook for another 20 minutes.

While your casserole is finishing cooking, you should be cooking your rice in a pot of boiling water. Drain and put aside when finished. (This will act as a base to plate your casserole over.)

Once your casserole has cooked for the whole 40 minutes, take it out of the oven to rest for 10 to 15 minutes (the longer it rests, the better it tastes).

When ready to eat, put 1 cup of rice on your plate and spoon a serving of casserole over the rice.
