Ingredients
4 servings
2 lbboneless skinless chicken thighs
cut into 1" pieces
1 Tbspvegetable oil
1 Tbspbutter
1onion
large, diced
1 tspginger
5 clovesgarlic
crushed and roughly chopped
1 x 6 ozcan tomato paste
1 Tbspgaram masala
or curry powder
1 tsppaprika
1 Tbspgranulated sugar
1 tspground cumin
½ tspturmeric
kosher salt
freshly ground black pepper
¾ cheavy cream
For Serving
Instructions
Step 1
Preheat Instant Pot to Sauté setting. Once heated, add oil and butter then add onion and garlic. Let sear until lightly browned, 3 to 4 minutes. Add tomato paste and cook, mixing constantly until it is darkened in color, about 3 minutes.
Step 2
Add 3/4 cup water, chicken, and spices to the pot, and season with salt and pepper. Seal lid and set to Pressure Cook on High for 5 minutes.
*If burn warning add 1/2 cup more water
Step 3
Let pressure release naturally for 10 minutes and then release remaining steam.
*If the sauce is too watery, remove chicken and saute on high to reduce
Step 4
Stir in heavy cream and adjust seasoning with salt and pepper.
Step 5
Serve with rice, naan, yogurt, and cilantro.
