Mushroom + Bacon Risotto

3 cupschicken broth

½ cupwhite wine

4 cupsmixed fresh mushrooms

1shallot
large

1 ½ cuprice

¼ cupparmigiana

¼ cupbutter

olive oil

bacon
Thick-cut, mix into risotto after cooked
Arancini Filling + Breading

Mozzarella
1/2 inch cubes

Bread crumbs
Italian, panko, any cracker crumbled up and seasoned

Eggs
egg wash

Flour
pre-batter

canola oil
Garlic Parmigiana Cream Sauce
Instructions
Risotto
Step 1
Pan 1: Finley chop mushrooms and cook down in a pan with olive oil


Step 2
Pan 2: Sauté shallots with olive oil until brown. Add rice to toast slightly for a couple of minutes (until browning happens)



Step 3
Pan 2: Add wine and cook until the wine cooks off (constantly stirring). Add chicken stock (1/2 cup at a time) until fully absorbed into rice (constantly stirring).


Step 4
Combine Ingredients: (Pan 1 & Pan 2) Mix mushrooms with rice and fold in butter, parm, bacon and spices. Best way to form them is to lay the risotto on a sheet pan flat to cool and firm up.



Sauce (make sauce while rice cools down)
Step 5
1. Sauté garlic in butter
2. Stir in flour constantly until brown (1 minute or so)
3. Add cream 4. Add cheese and herbs

Let rice cool to room temperature. The best way to form them is to lay the risotto on a sheet pan flat to cool and firm up.
Step 7
Form balls with your hands and stuff cubes of mozzarella into them. Note: damp hands help with forming balls. Keep a little bowl of warm water on the counter just to dip you hands in and make them damp a bit

Step 8
1. Dredge in flour 2. Egg wash 3. Bread crumbs



Step 9
Deep fry in Le Creuset pot until golden brown
