Brine

2 cwater

¼ cbrown sugar

1clove garlic
minced

1ginger root
bashed up

2 TblsSalt

1 tspdried thyme

1 tspdried oregano

Instructions
Step 1
Combine all brine ingredients and let chicken brine for 1-2 hours in the fridge.
Step 2
Make teriyaki glaze by combining all ingredients in a saucepan. Simmer on low heat until rich and slightly reduced.
Step 3
Remove chicken from brine. Pat dry.
Step 4
Season chicken with black pepper and grill on medium heat for 8-12 minutes, using glaze throughout.
Step 5
Serve over hot rice and pour remaining glaze over chicken. Garnish with scallions and toasted sesame seeds.
