Chicken Rice Paper Rolls

Delicious and easy to prepare. Make more than one serve and keep leftovers in the fridge, under a damp tea towel, in an airtight container, so you have a tasty lunch that's easy to grab. A great recipe to get the family involved with rolling their own rolls.

Instructions

Step 1
Prepare the rice noodles as per packet directions. Peel the carrot and grate. Heat a frypan over medium heat and lightly spray with cooking oil spray. Add chicken to hot pan and cook for 4-5 minutes on both sides or until cooked through. Allow to rest then slice or shred.
Step 2
Soak 1 rice-paper sheet in warm water for 10 seconds or until soft (don’t soak for too long or it will tear). Drain on a damp paper towel.
Step 3
Place some of the chicken along the centre of the rice paper. Add some noodles, avocado and carrot. Top with a few mint leaves.
Step 4
Fold as per packet directions and repeat with remaining rice paper sheets and filling. Serve with sweet chilli sauce.
