Tongan Fish and Bean soup
Crispy cod in a light and delicious coconut soup with melting soft yam. Can give you a bit of heat when you put enough chilli and the lemongrass makes it refreshing.

Instructions
Step 1
Put 1 tbsp oil in pan and fry off garlic and onions, adding in lemongrass.
Step 2
Add fish stock and hot water and simmer.
Step 3
Add in the diced yam and a few minutes later add in green beans, simmer until softened.
Step 4
In the meantime, cut the cod or fish into smaller pieces and cover both sides in cornflour. In a different pan, put 1 tbsp oil and pan fry the cod until sides are crispy. This will help it not fall apart in the soup, if you can't get firm fish.
Step 5
Add the spinach to the soup mixture and turn off the heat. Wait until the spinach has softened
Step 6
Finally add coconut cream and bring to boil again
Step 7
Then remove from heat
Step 8
Season and add chilli and pepper to taste
