Ingredients

2.5 Cupunsalted chicken stock
2 tspcornstarch
1garlic clove
minced
1 Tbsplemon zest
grated
2 Tbspfresh lemon juice
2 tspdill
finely chopped, plus dill for garnish
3 ½ tspkosher salt
divided
1.5 Cuporzo
uncooked
1 tspground coriander
1 tspblack pepper
4skinless chicken breasts
patted dry
2lemons
cut into 1/4 thick slices
2 Tbspunsalted butter
cubed
Instructions
Step 1
Preheat oven to 375 degrees. Lightly grease a 13 x 9 inch glass baking dish with cooking spray.
Step 2
Stir together stock, cornstarch, garlic, lemon zest and juice, dill and 1 1/2 tsp. salt in a large bowl. Add orzo and stir until combined; set aside.
Step 3
Stir together coriander, pepper, and remaining 2 tsp. salt in a bowl; rub over chicken until evenly coated.
Step 4
Pour orzo mixture into baking dish. Place chicken in a single layer on orzo mixture, and press down so majority of each chicken breast is covered in liquid. Layer half of the lemon slices, slightly overlapping, between chicken breasts. Reserve remaining slices for serving.
Step 5
Bake, uncovered, until a thermometer inserted in thickest part of chicken registers 165 degrees and orzo is fully cooked, about 40 minutes. Let stand 5 minutes. Evenly distribute butter around orzo, and fluff with a fork until butter is melted. Garnish with dill fronds, and serve with reserved lemon slices.
