LOUISIANA-STYLE SOY CURLS
Soy Curls are a shelf-stable meat substitute containing a single ingredient-whole soybeans- that are available at natural food stores or online. If you prefer, you can substitute 8 ounces of steamed, diced tempeh or 1½ cups of cooked or canned dark red kidney beans. This Creole-inspired dish is best served on a bed of cooked greens or whole grains.

Ingredients

1 cupsoy curls
1 tablespoonsalt-free creole seasoning
chopped 1 14.5 - ounce can or tetra pak salt - free diced tomatoes
2 teaspoonswhite miso paste
1red onion
green bell pepper
2celery ribs
3garlic cloves
1 teaspoondried thyme
½ teaspoondried basil
1 ¼ cupsVegetable Broth
or water
Spice Blend
Savory
Ground black pepper Hot

Instructions
Step 1
Place the Soy Curls in a large saucepan with the broth and Creole sea- soning. Bring to a boil. Cover and simmer for 5 minutes. Stir in the tomato paste, miso, onion, bell pepper, celery, and garlic. Cover and cook until the vegetables are softened, about 10 minutes. Stir in the tomatoes, bay leaves, thyme, basil, Savory Spice Blend, and black pep- per to taste and cook, uncovered, for about 15 minutes to blend the flavors and reduce the liquid. Remove the bay leaves before serving with Healthy Hot Sauce.
