Step 1
Heat waffle iron.
Step 2
Grate sweet potatoes into a bowl. Add egg whites, waffle mix, and seasoning. Whisk together until well combined.
Step 3
Grease waffle iron well with cooking spray. Spread sweet potato mixture evenly over the waffle iron and close. Cook 2-3 minutes and keep warm.
Step 4
Fry egg and ham to likeness. Place inside waffle and top with cheddar cheese, avocado, tomato, salt & pepper, and hot sauce.
