Instructions

Step 1
Preheat the oven to 200°C (390°F), 180°C (355°F), gas mark 6 and spray a twelve-hole muffin tray with a decent amount of cooking spray (or line a baking tray with a greaseproof paper and spray the paper with cooking spray if you’re making free form bhajis).
Step 2
Put the onions and sweet potato in a large bowl, then add the beaten eggs, spices, salt and pepper. Mix well until everything thoroughly combine.
Step 3
If you’re using the muffin tray, divide the mixture equally among the twelve greased moulds. Press the mixture the down firmly spray the top with more cooking spray.
Step 4
If you’re making freeform bhajis, get your hands dirty and toll the mixture into twelve rough balls. Space them out on the lined baking tray so that they’re not touching each other, then spray again with cooking spray.
Step 5
Bake the bhajis in the oven for 20-30 minutes, depending on size.
Step 6
About halfway through, turn them over using a spatula and spray again with cooking spray. If you want them to be crisp, grill them for a few minutes once they’re cooked. Serve and enjoy.
