Step 1
Blend the toasted red peppers with sun dried tomato paste, almonds, garlic, vinegar, smoked paprika, 2 tsp extra virgin olive oil, salt and pepper.
Step 2
Put a pan of water onto the boil, add the egg and boil for 6 minutes. Run under the cold water for 2 minutes, then leave for a few more until you peel.
Step 3
Toast the sourdough and whilst warm rub a garlic clove over.
Step 4
Spread the red pepper sauce over the sourdough, crumble across a little feta and top with the egg, finish with freshly shredded basil and a crack of black pepper. Get ready to glow.
