Step 1
Blanch the peas in generously salted and boiling water for about 1 to 2 minutes until slightly softened.

In a food processor, add the peas, a handfull of mint, chopped chives, some fresh dill, the juice of half a lemon and its zest, one clove of garlic, tahini, a generous pinch of salt, some freshly grounded black pepper and 1 tablespoon of olive oil . Blend everything together until a relatively smooth paste is formed.

Step 3
Toast a thick slice of sourdough bread in a generous amount of olive oil on both sides. Cut the end of a garlic clove and rub it onto both sides of the bread for some extra flavour.

Spread the pea mixture on top of the slice. Top with dollops of ricotta and some chopped almonds for some extra crunch.
