Yeah so basically I took Chicken Mandi and made it more convenient for me to make, but at the same time ruined a lot of the authenticity.

1 ½ teaspoonsground coriander
1 teaspoonground cloves
6green cardamom pods
½ teaspoonground cinnamon
½ teaspoonground turmeric
1 teaspoonground cumin
1 teaspoonwhole black peppercorns

2 ¼ cupslong grain rice

3bay leaves

Instructions
Step 1
This recipe calls for a rice cooker, if you don't have one I assume you know how to cook rice a different way (but also, please get a rice cooker it'll make life so much easier).
Chicken Marinade

In a food processor or blender, add in and blend all your spices till you get a nice powder.

Cut up your chicken into bite sized pieces then transfer them to a bowl. Add your spice mix along with some olive oil and some salt, then incorporate everything together.

Marinade overnight, or for at least 30 minutes.
Rice
Step 5
Wash and strain your rice, then add to your rice cooker, along with 2 tablespoons of the previously made spice mix, some turmeric, bay leaves, and curry powder. Mix and coat all the rice grains, then add in your chicken broth (1:1 substitution with water markings) along with some salt.

Start up the rice cooker and begin cooking your other ingredients.

While your rice cooks, cook your other stuff.

Slice your onions thinly, then add one cup of vegetable oil to a pot on medium-high heat.

Once your oil heats up, add the onions in and fry them, stirring them every 3-4 minutes. This process will take 10-15 minutes, so be patient! But also be careful, towards the end, they will burn fast so keep a watchful eye and remove them quickly.

Remove the onions when they look golden brown. Spread on a paper towel lined plate to absorb the oil. Set aside until ready to garnish.

In the same pot, add in your chicken along with some oil and cook all the way through.

Chop up your ingredients, add to a blender with some salt and lemon juice, then blend till you get a smooth consistency.

In a large platter, layer the rice.

Add some of the fried onions.

Add the chicken, then add more onions.
