I would first like to preface this by saying that this is a completely inauthentic way of making Hainanese Chicken Rice; being a university student automatically causes me to destroy other cultures for my convenience.

Instructions
Step 1
This recipe calls for a rice cooker, if you don't have one I assume you know how to cook rice a different way (but also, please get a rice cooker it'll make life so much easier).

Slice your chicken and onions.

Into a mixing bowl, add your chicken, onions, soy sauce, olive oil, chicken stock, salt, and ginger powder. Mix till everything's incorporated.

Leave to marinade overnight (or for as long as you can tolerate).
Cooking Time

Rinse your rice, then add to your rice cooker, followed by olive oil, vegetable oil, garlic powder, ginger powder, and salt.

Mix everything around till all your grains are coated, then add your chicken stock (use chicken stock instead of water; 1:1 ratio according to your rice cooker) and start the rice cooker.

To a medium high heat pan or skillet, add your oil, followed by your marinated chicken & onions. Cook till chicken is completely cooked through and onions are golden brown.

In a bowl, mix sriracha, vegetable oil, white vinegar, chicken stock, lemon juice, olive oil, garlic powder, sugar, ginger powder, and salt.
