Instructions

Step 1
Preheat oven to 350

Step 2
Combine the enchilada sauce in a medium bowl. Pour about 1 1/2 cups sauce onto the bottom of an UNGREASED 13" x 9" baking dish. Set aside the rest of the sauce to use later.
Step 3
Stir together filling ingredients and set aside. Be sure to save some cheese to sprinkle over tortillas at the end.
Step 4
Heat a little oil in a small skillet. Place softened tortillas in skillet and heat on each side for about 15 seconds or until soft. Place softened tortillas on a plate and repeat process with rest of tortillas.
Step 5
Divide filling among tortillas. Spread filling to the left of the center on each tortilla. Roll up and place seam-side down in baking dish. Repeat with rest of tortillas. Spoon or pour remaining sauce over tortillas and sprinkle with a little more cheese.
Step 6
Cover dish with a lid or foil* and bake for 20 minutes. Remove cover and bake for 5 more minutes.
Step 7
*If using foil, grease the underside or else use Release non-stick foil. Otherwise the foil will lift off your cheese topping when you remove the foil from the dish.
