Instructions
Step 1
brown the chicken breast in a pot
Step 2
add in the water, chillis, garlic, bay leaves, onion and carrots and boil for 30 mins
Step 3
remove the chillis and put them into a blender with the spices and a little water from the chicken.
Step 4
strain the peppers from the blender back into the pot and cook low and slow until the meat can be shredded
Step 5
dip the tortillas in the sauce, fry and add on the chicken and cheese
Step 6
flip closed and then fry them in more of the sauce
