Instructions
Step 1
Bring broth to boil in a 3 qt. sauce pan
Step 2
Crush noodles and add them together with rice and salt to boiling broth
Step 3
Cook about 15 minutes until rice is soft
Step 4
While broth is cooking beat eggs until light and frothy (do not under beat)
Step 5
Gradually stir lemon juice into eggs
Step 6
Slowly add at least 4 or 5 tablespoons of cooked broth into egg & lemon mixture while stirring vigorously (this will prevent the egg mixture from curdling)
Step 7
Slowly add egg mixture to broth while stirring vigorously
Step 8
Simmer for about 2 minutes and then shut off flame (do not allow to boil)
Step 9
Ladle soup into bowls
