Instructions
Step 1
Tear tofu into bite size pieces. Mix in with corn flour, 1tsp cumin, 1tsp garam masala, 1/2 tsp each of tumeric, chilli flakes, and ground ginger.
Step 2
Bake at 175 for 20 minutes
Step 3
Add the butter, onion, garlic, remaining spices, ginger and tomato purée to a pan.
Step 4
Add chopped tomatoes, coconut milk, then the tofu. Simmer for 10 minutes. Add the sugar and a squeeze of lemon at the end. Serve with rice
