Instructions
Step 1
Cook pasta to al dente using packet instructions. Unsure to cook in salted water.
Step 2
Cook garlic in medium heat pan until fragrant then add capsicum and cook until fragrant or begin to soften.
Step 3
Add prawns, spices and sundried tomatoes. Stir through and cook until fragrant. (Prawns will cook during the summer process so letting them cook too long here will over cook them by the end of the recipe).
Step 4
Add sweet chilli sauce and stir through. Once combined add flavoured oil and stir through.
Step 5
Add sour cream and cream cheese and stir through. (The cream cheese will take some time to melt through so donโt worry about the little lumps too much)
Step 6
Stir through milk and 1/3 cup of the pasta water and let simmer uncovered until desired thickness is reached.
Step 7
Serve by adding pasta to a bowl topped with desired amount of sauce and prawns. (Note sauce goes a long way)
Step 8
(Leftover sauce can be refrigerated and reheated on the stove for leftovers, just cook more pasta and add milk if too thick)
