Step 1
Start by peeling and cutting the shallots, garlic and chilis. In a pan on medium heat, add the vegetable oil and once it’s hot add the chopped ingredients
Step 2
Let those cook for 4-5 minutes until browning, and in the meantime slice the tomato.
Step 3
Remove the shallots, garlic and chilis from the pan, and in the same oil add the sliced tomato and the fermented shrimp paste. Cook for 3-4 minutes until almost mushy and remove from the oil as well.
Step 4
In a big mortar, add the cooked ingredients, the salt, sugar and lime, and crush until roughly resembling a sauce, not fully smooth and quite rustic
